Nestl\u00e9 Unveils 2027 Food Trends: Fresh Produce Drives Flavor, Nutrition, and Global Cuisine Shifts

NEW YORK, October 16 — Nestlé USA has released its 2027 Food and Beverage Trend Forecast, offering a detailed look at how American eating and drinking habits are expected to shift in the coming year. The forecast, grounded in consumer data from brands present in 98% of U.S. households, outlines five key trends shaping the future of food and beverage choices. At its heart, the report reveals that consumers are increasingly defining what is ‘worth it’ on their own terms — whether through flavor, specific health benefits, or personalized experiences.

This insight comes directly from Linh Phillips, Director of Consumer Insights & Foresight at Nestlé USA, who emphasized that personal agency is driving purchasing decisions across categories. One of the most striking developments is the surge in demand for ‘zesty’ flavors.

Searches for ‘zesty foods’ have increased by 130% year over year, while sour category sales have climbed 309% since 2022. This reflects a growing appetite for bright, sharp, and lively tastes such as yuzu kosho, calamansi, sumac, and chile citrus — ingredients that are moving from niche to mainstream. Another significant trend is the integration of protein with added functional benefits.

Searches pairing protein with probiotics have risen 300% year over year, and interest in ‘protein comfort food’ has reached breakout status. Meanwhile, coffee culture is evolving among younger consumers: searches for ‘banana bread lattes’ have jumped by 6,267% year over year, and 63% of Gen Z coffee drinkers now prefer their coffee with a lot of flavor.

Global cuisine is also becoming more embedded in everyday comfort food choices. Nearly three in four Gen Z and Millennial consumers include international dishes among their comfort foods, and 66% of consumers express interest in exploring regional variations within those cuisines. This shift underscores the role of fresh produce not only in flavor innovation and nutrition but also in cultural exploration.

The forecast concludes that these trends are interconnected, with fresh produce serving as a foundation for innovation across taste, health, and global inspiration. As Nestlé USA looks ahead, it will continue to monitor how these consumer-driven shifts influence product development and market offerings in 2027 and beyond.
